When Its Cold Outside - Its Chili

By Donna Hager Actually, I love chili anytime of the year, but during cold weather it is especially good, or as the novelist Margaret Cousins said, "Chili is not so much food as it is a state of mind. Addictions to it are formed early in life and the victims never recover. On cold, blue days in October, I get this passionate yearning for a bowl of chili, and I nearly lose my mind." There are probably thousands of different chili recipes and I enjoy making and eating a variety of chili recipes. For me, it is a great food adventure. And although I may have my personal favorites, such as my version of a traditional chili, I really don't get too excited if someone else has his favorite that is much different than mine. Some people like it spicy and hot and some prefer it mildly spiced. Some cooks use ground beef while others insist that the beef should be chopped. There are chili recipes that use chicken, turkey, pork, venison or other rather exotic meats. Some chili recipes use beer or meat stocks as part or all of the cooking liquid. There are many vegetarian versions of chili as well. The use of vegetable stock and/or tomatoes eliminates the need for meat. What kinds of beans, if any, should be in a chili? Here, too, you'll find a vast range of preferences. Pinto beans, red beans, kidney beans, black beans or white beans - there are recipes that use each or them or even a combination of several, such as the Three Bean Enchilada Recipe on the website. But you should also know that there were no beans in chili originally! What kind of chile peppers or chili seasoning should be used and how much? With this the great chili debate really heats up - so to speak. ( Chile refers to the pepper pod. Chili to the creation. ) And the great chili debate is not limited to what chili or chili recipe is best. Some people are so passionate about where the first bowl was made and who made it that they nearly come to blows. In America, chili is something many people love to cook and eat, and some love to argue about. My Texas friends will undoubtedly defend their chili as the best ( and maybe the only true chili) in the world. In his book, "Simple Cooking," John Thorpe wrote, "It can only truly be Texas red if it walks the thin line just this side of indigestibility: Damning the mouth that eats it and defying the stomach to digest it, the ingredients are hardly willing to lie in the same pot together." What is amazing to me, however, is that even among residents of Texas there is disagreement as to the single best chili recipe. That has helped keep "chili cookoffs" alive and well, not only in Texas, but in a number of areas throughout the country. I have never desired to be a chili judge. If their life isn't in jeopardy, their digestive systems may be. When my husband once thought about accepting an invitation to judge such a contest I told him he'd sleep outside that night if he did. He declined the invitation to be a judge, thank goodness. Is there such a thing as "the original Texas chili?" The history of chili is very unclear about this. There is a recipe that is at least traceable to a cattle range cook, or perhaps it was from the combined offerings of several old cowboys straddled up to a Texas bar. An "Original" Chili Recipe
Cut up as much meat as you think you will need (any kind will do, but beef is probably best) in pieces about the size of a pecan
Put it in a pot, along with some suet (fat) enough so as the meat won't stick to the sides of the pot
Cook it with about the same amount of wild onions, garlic, oregano, and chiles as you have got meat
Put in some salt
Stir it from time to time and cook it until the meat is as tender as you think it's going to get Some chili recipes today are rather "tame" or mild because that is the way some people like it. But the history of chili is pretty clear that there never was anything really mild about chili and there was a very good reason. Think about it. Even if chili did not originate in Texas, the cattle drives and range cooks certainly helped popularize it. On the trail, the cook used what meat he had available. If if wasn't fresh-killed beef or buffalo or deer then it was likely jackrabbit or rattlesnake. The range cook certainly feared his own lynching if he tried to feed the cow hands freshly killed beef or buffalo without aging the meat. Out of necessity he had to attempt to disguise the meat's flavor and for this he used what he had on hand: onions, garlic, salt and chile peppers. The range cook also knew that spices helped keep the meat from spoiling. Chili became the meal of the day. And the term "Chili con Carne" is Spanish for "peppers and meat." (See, no beans.) Some food experts and historians say that San Antonio should be given credit for popularizing chili because it was there that women called "Chili Queens" occupied parts of the Military Plaza and sold their highly seasoned stews called "chili" from small carts. Although these ladies sold chili from carts for many years, it became very popular by 1880. In fact the plaza became known as "La Plaza del Chile con Carne." And it was then that the "Queens" began to refine and add sophistication to the dish they were selling. They brought it somewhere near todays stage because each one was constantly striving to improve her chili recipe, simply to attract more customers than any of the competition. The desire to cook up the best bowl of chili in the world is at least that old. Apparently chili cookoffs were born. Here is an example of a Chili Queen's recipe: (Again, no beans)
Chili Queen's Recipe
Original San Antonio Chili Ingredients:
2 pounds beef shoulder, cut into 1/2 inch cubes
1 pound pork shoulder, cut into 1/2 inch cubes
1/2 cup suet (fat from meat, 1/4 cup beef fat, 1/4 cup pork fat)
3 medium-sized onions, chopped
6 garlic cloves, minced
1 quart water
4 ancho chiles
1 serrano chile
6 dried red chiles
1 tablespoon comino seeds, freshly ground (cumin)
2 tablespoons Mexican oregano
Salt to taste Instructions:
Place lightly floured beef and pork cubes in the pork and beef fat in a heavy chili pot and cook quickly, stirring often.
Add onions and garlic and cook until they are tender and limp
Add water to mixture and simmer slowly while preparing chiles
Remove stems and seeds from chiles and chop very finely
Grind chiles in molcajete and add oregano with salt to mixture
Simmer another 2 hours
Remove fat pieces and skim off some fat
Never cook frijoles with chiles and meat
Serve as separate dish.
(Institute of Texan Cultures) So where was chili invented? Again the history of chili simply indicates there may not be an answer. We know that peppers and spices have existed since the beginning of time. Chile peppers show up in the ancient foods of China, India, Indonesia, Italy, the Caribbean, France, and the Arab states. The green chile pepper was brought to what is now New Mexico in 1598. And strangely enough, Canary Islanders who came to San Antonio as early as 1723 used local peppers, wild onions, garlic, and other spices to cook pungent meat dishes somewhat like the ones they prepared in their native land. But it is reasonably clear how chili was popularized. The credit must go to the cattle trail cooks and certainly to the Chili Queens of San Antonio. As a food, how important is chili to certain parts of American life and culture? The famous mountain man, Kit Carson, thought of chili when he supposedly uttered his dying words: "Wish I had time for just one more bowl of chili." Will we ever be able to crown one single recipe as the best? I don't believe so, and that's fine with me. I think everyone has great fun trying to do so. Wind Chimes You Can Live With

A quality wind chime will have a precise musical pitch and the chime elements will harmonize with one another. This will create a soothing effect on the listener. A chime that is not properly tuned will create a dissonance that will be a long term irritation to those forced to listen to it. Tuning problems are common with many of the cheap imports from China. Many of these chimes are pretty to look at but the sound will likely drive you nuts in the long run. Another factor one must consider is the volume that will be produced by the chime when the wind blows. Generally, the larger the chime is the louder the chime will be. If you prefer a low volume chime you may want to select a smaller chime. There are many different types of wind chimes available on the market. All of these materials can make a fine wind chime if the design and construction of the chime is done properly. Oil Painting Tips - All About Oil Painting Brushes

By Ralph Serpe Oil painting brushes come in a wide variety of sizes and shapes and this can sometimes overwhelm a beginner. This article will provide you with an overview of the various oil painting brushes available and help you decide what kind of brushes you should invest in. BRUSH TEXTURES Oil painting brushes come in two different textures basically, and they are classified as hard and soft. Hard brushes are generally referred to as bristle brushes and they are quite resilient. Hard brushes are made from hog's hair and they are strong and stiff. They will hold a good amount of paint and can handle the oil painting medium quite well. I personally prefer working with bristle brushes exclusively as I tend to paint rather rough and direct. Soft oil painting brushes are made from softer hairs that come from animals like sable, squirrel, or mongoose. Softer brushes will generally give your painting a softer smoother appearance and are more often used for finishing or detailed work. Sable brushes are the most expensive usually but there are synthetic brushes made of nylon that are very good substitutes for sable. They are more resilient and cheaper than sable.

BRUSH SHAPES There are five shapes to brushes that are generally used and each is meant to have its own function. I prefer to paint with flats, brights and fliberts of various sizes, and only occasionally make use of the other shapes. This is my preference and you will certainly develop your own the longer you paint with oils. Flats Flat oil painting brushes have a wide square end with medium to long hairs. Flat brushes generally have a lot of spring to them and can hold a lot of paint. You can use these brushes for broad sweeping strokes or you can turn the brush on its edge to create fine lines. Flat brushes are great for earlier stages of a painting when you are blocking in large areas. Brights Bright oil painting brushes are similar in shape to flat brushes but the hairs are shorter. They are best used for making shorter controlled strokes. They do not hold nearly as much paint as a flat brush. Filbert The filbert is also similar to the flat brush only the edge of the brush comes to a rounded shape. The hairs of the filbert are medium to long in length. This rounded shape will give you more control then a bright. The filbert is great for blending and figurative work. Rounds A round oil painting brush has a round or pointed tip. They hold a nice amount of paint and are great for making thin or thick lines. Use this brush for dabbing on dots or blotches of color. Round brushes are also good for washes, fills and detailed work. They are not suited for creating hard straight edges. Fans The fan oil painting brush is a flat fan shaped brush. The fan brush is a specialized brush. It is either used very often by the artist or not at all. It really depends on your style of painting. This brush is not suited for holding paint. It is used more often for blending colors and you should keep this brush clean and dry if you plan to do a lot of blending during a session. The brush will begin to lose its effectiveness when it becomes filled with paint. You may want to keep a few extras on hand. BRUSH SIZE Oil painting brushes come in a variety of sizes indicated by numbers as in 1,2,4,6,8,10; size 1 being the smallest and 10 the largest in this example. BRUSH MANUFACTURERS Oil painting brushes are made by a number of different manufacturers. A few of the more popular brands are Winsor & Newton, Silver Brush and Robert Simmons. Some artists prefer one brand over another. Other artists like to have an assortment of different brands available. The only way you will know what you like best is by working with the brushes yourself. CARING FOR YOUR BRUSHES No matter what brush you buy, whether they are top of the line expensive brushes, or cheaper ones, you will definitely get more life out of them if you care for them properly. There seems to be a difference of opinion when it comes to brush care, especially when it comes to drying your brushes. I personally have two products on hand for cleaning and conditioning my brushes: Masters Brush Cleaner and Preserver and Mona Lisa Pink Brush Soap. I have found that the Masters Brush Cleaner works great on brushes that are deeply stained and hardened with paint, that I would have otherwise thrown out. I use the Mona Lisa Pink Brush Soap to clean my brushes right after a painting session. These cleaners will also help condition your brushes. After washing my brushes with either of these cleaners, I then attach a clothes pin to the handle of the brush and rest the clothes pin on the edge of a counter or table so that the brush is hanging with the bristles pointing toward the floor. LASIK Malpractice

By Kevin Stith LASIK, pronounced LAY-sik, is actually an acronym for LAser in SItu Keratomileusis. It is a type of refractive surgery procedure in which the cornea of the eye is reshaped to alter its optical ability. This is being done to correct myopia, astigmatism, and hyperopia, LASIK malpractice occurs when the surgeon does not perform the procedure right and results to a damage in the eye or both eyes of the patient. Complications during the surgery can lead to patient complaining of LASIK malpractice. In refractive surgery, there are a few complications the surgeon should anticipate and explain to the patient. Awareness of these complications can help the patient make an informed decision if he wants to continue the procedure or not. Such complications range from problems that are quite negligible to bothersome, the worst case scenario being losing an eye. But since the procedures of refractive surgery are always being refined over and over again, the occurrence of the worst case scenario has actually decreased to almost being nonexistent. However, even small problems continue to disturb some unfortunate patients. One complication of refractive surgery or LASIK is regarding the formation of cataract in the crystalline lens of the eye. They make the lens so foggy that light can no longer pass through to reach the cornea, thus making you temporarily blind. While a cataract can be cured by performing lens implant, this requires additional eye surgery which means having additional risks of infection and damage. Another complication of LASIK is involved in the correction of high amounts of myopia (the scarring of the central cornea) where the laser in the surgery is focused. This scarring serves as a filter of the light passing through the central cornea and, due to the formation of clouds and haze, vision is reduced. The glare and halos that patients usually complain about are also caused by this light diffusion. Finally, the epithelial growth into the cornea stroma is another serious complication of LASIK, producing significant vision problems. This happens when the epithelium lining the front of the cornea begins to develop into the stroma area and gradually invades it. These complications are what eye surgeons should prevent so that they will not be alleged for malpractice. Nutritional Homemade Carp Baits - Essential Effective Minerals

By Tim F. Richardson Using carp essential minerals in your homemade baits to hook more carp! The main minerals which have been detected in carp by scientific trials, the lack of which has been observed to cause signs of deficiency, are sodium chloride (sodium and chlorine,) phosphorus and calcium. Others include magnesium and zinc, but there are possibly other deficiencies in carp which have not been observed yet through scientific study; e.g.: manganese, selenium, potassium, cobalt sulphur, iodine, chromium, and fluorine. Many of these help repair and produce new cells, and repair damaged body tissues. Zinc helps in digestion, and magnesium has a role as an enzyme co-factor. Fish absorb calcium from the water around them. They are rarely deficient in this important skeleton forming mineral, but the rate at which it is retained in the body is set by another important mineral, phosphorus. Increasing phosphorus in the diet is beneficial, as it will increase calcium retention. In common carp, the total body ratio in the body is 4 to 1 of phosphorus to calcium. Absorption of dietary phosphorus is not affected by calcium in the diet. Fish meals are rich in both. Plant-origin meals lack in calcium, and are high in phosphorus, but not in a readily digested form; animal sources are better absorbed to counter any possible deficiency in these. Meat and bone meals have their benefits, for example from fish silage. Soya meal has an intermediate phosphorus availability of 40 %. The most commonly used phosphorus supplement in carp culture is dicalcium phosphate, with the highest level of availability of 80 %. It is used at levels not under 0.7 % of the dry meal. Potassium may be provided through the potassium chloride and oxide salts in treated ash or potash (potassium carbonate), as also supplied in agricultural pig, cattle and horse feeds. My friends and I have caught many big carp using animal feeds as the bulk nutritional provision in our baits! Iron is supplied in blood meals, shellfish and crustacean meals derived from oysters and shrimps, prawns and krill; copper in oysters, crabs, lobsters; potassium in mussels, scallops, clams; iodine, phosphorus and selenium in sea foods in general. * An especially mineral rich sweet carp attractor molasses: Black Strap Molasses from second boiled sugar cane, are an extremely underestimated, scientifically proven feeding trigger, also high in iron and magnesium. The unsulphured grade is the finest, and sweet tasting, with higher sugar content. Normal grade is the bitter tasting, but most nutritious, as used in health supplements, and also used as animal supplements, like horse feed liquid molasses; a very economical source. Sugar beet molasses are unpalatable, but high in calcium, potassium and chloride salts, worth mixing with cane molasses. The first treated grade is 50 % sugar. * An incredible carp attractor salt: One Japanese research paper stated that, in carp tests, in with various amino acids solutions and salt: sodium chloride gave The most extreme response. Interestingly, two of the amino acids tested were not essential amino acids to carp but the scientists obviously had a reason for testing them against salt! These were proline, and also taurine. (Incidentally, taurine in squid extracts, has played a big role in one or two international bait companies ongoing success!) * Mineral salts: These have an interesting role in helping the carps own digestive bacteria to break down food, which is another good reason to use them in bait. When carp eat plant material, like water weeds, much energy is lost, as gut bacterial enzymes do the work of breaking down the cellulose cell walls to produce sugars. I feel that additional molasses in the bait help here too. Molasses are used worldwide for industrial fermentation, as it is a highly nutritional food for bacterial activity in production of alcohols. Are You Sure You Know Where You Are Stitching When You Sew?

By Marian Lewis Are you really sewing 5/8" seams or is it slightly more or
less? If you are following the markings on your sewing machine
throat plate, I hate to tell you, but they aren't 5/8", etc. The toes of your regular presser foot are not a good guide
for 1/4" seams either. Check them out and you will see that
they are generally more than 1/4". There is one exception to this that I know of and that is
the "little foot" that was made especially for quilters to
do 1/4" wide straight stitching only. Machines don't usually come with this foot. It is a
special order narrow toed foot. The markings on sewing machines are in centimeters. Why is
your machine marked in centimeters? Because they are not
manufactured in the United States. They are made overseas
and they use the metric system. Our sewing patterns and instructions are in inches. To have sewing success, we must stitch accurately. We need help to identify where the stitches should be. We cannot "eyeball" it and we shouldn't use the centimeter
markings if you are stitching in inches. I know that a lot of you believe you are stitching correctly
But, I would like you to double check to make sure. Here is a simple way to do that. Drop your needle down and measure out to the markings on
your sewing machine with an accurate tape measure. Close
is not the answer. Exact is. I highly recommend that you mark your machines so that you
have a clear guide to stitch accurately. I don't particularly like the metal bar type stitching guides as I feel they are too bulky. And, they are'nt really where I need them. I much prefer a flat piece of tape. I always have a tape stitching guide on my machine. You can use
any kind of tape you like for this. Some tapes already have ruled markings on them. Or, you can
mark your own. I cut a piece of tape about 2-1/2" long. The
width of the tape I use is about 3/4" wide. I place the top end of the tape straight out from the needle
with the long edge of the tape 1/2" away from the needle.
The tape extends down about 2" in front of the presser foot
but still 1/2" from the needle. Yes, I have to lift up the end of the tape to get into my
bobbin, but that's OK. I would rather stitch accurately and
save myself a lot of headaches later when things won't line
up. Then, I mark the tape at 5/8" for my seams. I make a mark
at 1" also since I use that often. Sometimes, I use a different color pen for each marking to
distinguish one from the other. The tape guide should be 2" in front of the presser foot so
that you can start guiding your fabric along your stitching
mark long before a stitch is made by the needle. By the time the fabric gets to the needle, it is too late.
You need to be guiding the fabric accurately long before it
reaches the needle. Watch the tape guide, not the needle! With a tape stitching guide, you will see a great
improvement in the accuracy of your stitching. Other Helpful Tips Usually, I use the "little foot" for 1/4" seams. When I need to sew 3/8" seams, I place tape or mark 3/8"
directly on my machine to stitch necklines and curved areas. Of course, I have previously trimmed the pattern to have
only a 3/8"' seam there. You will have much more control on curves if you use short
stitches and a 3/8" seam allowance at your neckline edges. Remember to prepare your patterns by trimming off 1/4" and
leaving 3/8" before you cut out your garment. Make a note
to yourself until you get into the habit of stitching
necklines at 3/8" instead of 5/8". I use the edge of the tape placed at 1/2" from the needle
for staystitching. If I'm making a 3" or 4" hem in something, I will mark the
bed of my machine to help me keep it straight. Do whatever it takes to help you. Don't be afraid to use tape stitching guides on your

If we are to build healthy marriages, we much do so "on purpose." We cannot just hope that it will happen by accident. "Hope," say the generals, "is not a good strategy." Planning, work, and the investment of time, are much better strategies for any important endeavor of life. The first characteristic of a healthy marriage for us to consider is the way that we talk to our spouse, and the way that we talk about our spouse..
Healthy marriages are characterized by supportive, encouraging, and honest communication. We want to build each other up in our marriages, never tear our spouse down (especially under the guise of being "honest"). Two thousand years ago St. Paul wrote this verse that is worthy of every refrigerator door in America,
"Don't let any unwholesome talk come out of your mouths, but only what is helpful for building others up, according to what they need, so that you can benefit those who listen." (Paul's letter to the Ephesians, Chapter 4).
There are three important parts to Paul's verse. First, that if we don't have something good to say, don't say anything at all. I think my mother told me that as well. Second, that we should consider our listener's needs. My wife has a different set of needs than does my daughter, or my sons. We should consider how best to encourage and support that particular person. Finally, the purpose of our talking in the first place should be to benefit the listener.
When I first began to seriously apply Paul's principle, and I began to really look at what I was saying, and why I was saying it, my vocabulary and my time talking were cut by about one-third. I had become sarcastic, but funny. But my funny sarcasm was always at the expense of another. When I determined to build others up and benefit them with my speech, I talked a lot less. But I became a much better person, both inside and out.
Check your motives. If you just want to make yourself look good, you will tend to be sarcastic, and you will tend to "tease" other people by degrading them in front of others. Tips For Surviving As A Corporate Refugee

People who are uprooted from the familiar terrain, customs and native language they've known for a very long time. From my own experience as a corporate refugee over the past year, I can validate that the sense of loss can be overwhelming at times. The loss of a secure income is significant in itself, but when it compounds with the loss of identity, structure and community, there are times when it's paralyzing. Today, almost a year later, I proudly consider myself a Corporate Refugee who has successfully navigated the grueling journey and emerged with an amazing new sense of purpose and freedom! With that in mind, I offer you tips for surviving from my own experience. Give Yourself Time To Heal Acknowledge the fact that you have been thrown into a life changing experience. Before you can move toward the future it's important to resolve the past. Just as in the loss of a loved one, there are stages of grief you will need to deal with. Chances are you will feel denial, anger, bargaining, and depression before you get to acceptance. Expect it, accept it, and try to have the forethought to recognize where you are in the process. Take Advantage Of Your New "Lack Of" Schedule One of the greatest advantages you have right now is "time". Even though much of that time will be preoccupied with processing your thoughts, there are no boundaries around where and when you do that. Turn off your alarm, forget your bedtime and let your body reset it's own clock. On gorgeous days go out and explore during times you would have been working. Whether you're running your toes through the grass, sitting on the beach or running errands, you'll discover sights, sounds, and people you haven't experienced at that time before. Cold, rainy days are great for putting your nose in a good book, clearing out clutter and browsing great bookstores. Like it or not, your time is your own now, take advantage of it. Soul Search And Rediscover Your Passions This is NOT the time to make major life decisions, but it's a perfect time to re evaluate what is most important to you. When you were 10 years old, what was it you wanted to be when you grew up? If you went in another direction, is it time to explore that option now? What are your values, your needs, your personal boundaries? What is it that you love so much you get lost in time? What is it that makes you laugh until you wet your pants? What have you always wanted to do, but never had the chance? The time is right to explore these things about yourself. Evolve Rather Than Revolve This is a time of evolution for you, not a revolution. Based on what you're doing, or not doing, things will change. You'll think about and do things differently than you did before. Things that worked for you before will no longer work. You'll see things you didn't see before. Take time to "just notice" without judgment. It doesn't need to be about shoulds, coulds, good or bad. It just is, so just notice. Let Go And Let Be I'm a believer that we have the power to influence outcomes, but we can't control them. In other words, what will be will be. I also believe that the universe is constantly sending us messages. If you don't listen to the messages, you get to learn the lessons. Save yourself the frustration and struggle of trying to control outcomes. Maintain Undeniable Faith Even if it's not clear now, never lose faith in yourself or your abilities. Your past successes are validations that you have what it takes to navigate and emerge from this experience with a greater sense of understanding and appreciation.
